- 2 cups of brown sugar
- 1 cup of shortening or hard margarine, softened to room temperature
- 1 cup of molasses
- 2 eggs
- 5 cups flour
- 1/4 teaspoon of salt
- 4 teaspoons baking soda
- 1/3 cup of coffee (may use water or milk)
- 2 teaspoons ginger
- 2 teaspoons cinnamon
- raisins for decoration (optional)
Glaze (optional)
- 1 cup of sifted icing sugar
- 1 tablespoon butter
- milk( enough to drizzle icing over cookies if using)
- Cream together shortening and sugar.
- Add molasses incorporate it well.
- Add eggs one at a time and beat well after each addition.
- Sift dry ingredients together.
- Add into the creamed mixture alternately with the coffee.
- Drop by spoonfuls onto a greased baking sheet.
- Add a few raisins to the top of the cookie if you wish.
- Bake in a preheated oven at 375 for 8-10 minutes.
- Leave the cookies on the baking sheet for about 5 minutes and then transfer to a cooling rack. At this point you can drizzle the cookies with the icing if you wish.
