Soft Molasses Cookies

These are on of my husbands favorite cookies. It has a slight hint of coffee flavor which goes really nice with a good cup of coffee or a tall glass of cold milk.


  • 2 cups of brown sugar
  • 1 cup of shortening or hard margarine, softened to room temperature
  • 1 cup of molasses
  • 2 eggs
  • 5 cups flour
  • 1/4 teaspoon of salt
  • 4 teaspoons baking soda
  • 1/3 cup of coffee (may use water or milk)
  • 2 teaspoons ginger
  • 2 teaspoons cinnamon
  • raisins for decoration (optional)

Glaze (optional)

  • 1 cup of sifted icing sugar
  • 1 tablespoon butter
  • milk( enough to drizzle icing over cookies if using)
  1. Cream together shortening and sugar.
  2. Add molasses incorporate it well.
  3. Add eggs one at a time and beat well after each addition.
  4. Sift dry ingredients together.
  5. Add into the creamed mixture alternately with the coffee.
  6. Drop by spoonfuls onto a greased baking sheet.
  7. Add a few raisins to the top of the cookie if you wish.
  8. Bake in a preheated oven at 375 for 8-10 minutes.
  9. Leave the cookies on the baking sheet for about 5 minutes and then transfer to a cooling rack. At this point you can drizzle the cookies with the icing if you wish.
